Flatbread and/or Pita Pizzas
Honestly, who doesn't love homemade pizza? If you're ever in a hurry during lunchtime, no need to pop a frozen pizza (full of preservatives and unneeded sodium) into the oven. I'm sure you have all of the ingredients hiding in your fridge and cupboards for a healthy and easy take on such a classic dish !

Ingredients:
-1 (or 2 if you're really hungry) whole wheat flatbread(s) or pita(s)
-Any one of the following: Hummus, pizza sauce, spreadable light cream cheese, tatziki, quark cheese
-As many of the following vegetables that are currently in your fridge: Sliced tomatoes, red onion, green onion, bell peppers, spinach, mushrooms, jarred artichokes, zucchini, kale etc.
-Possible proteins: canned kidney beans, canned chickpeas, diced ham. (try to avoid processed meats)
-1/4 cup of shredded cheese of your choice (mozzarella, cheddar, provolone, feta, goat cheese,  Parmesan, mixed Kraft shredded cheese)

Method: 
1) Preheat oven to 350 F
2) Spread any of the suggested "sauces" on the pita (up to 1cm from the edges)
3) Prepare and add as many toppings as you wish! The more vegetables the better!
4) Top pizza with cheese
5) Place pizza on a baking sheet and place in oven for 8-10 minutes


My favourite flatbread pizza:
1 whole wheat flat bread spread with roasted red pepper hummus
Sliced tomato, chickpeas, jarred artichokes cut into quarters, spinach (just enough to cover the pizza)
Topped with 1/4 cup of goat cheese
 ENJOY!


Apple, Aged Cheddar and Smoked Turkey Panini
 
Try this quick, easy & delicious sandwich!
Toasted whole grains, melted aged cheddar, lean turkey slices and a burst of flavour from the apple provides a well-rounded sandwich that's sure to overcome hunger.



4 sliced of aged cheddar cheese
4 slices of whole grain bread
1 apple (try McIntosh, Jonagold or Crispin), peeled, cored and thinly sliced
4 slices of smoked turkey breast
2 tsp (10 mL) honey mustard
1/2 cup (125 ml) baby spinach

Heat a panini press or cast iron pan over medium-high heat.
Divide cheddar evenly between two slices of whole grain bread, followed by 2 slices of apple and 2 slices of smoked turkey. Spread remaining two slices of bread with honey mustard and place on top of the turkey (mustard side down).
Place sandwiches in heated panini press or cast iron pan and grill for 4 to 5 minutes turning as necessary to evenly brown the bread on both sides of the sandwich.
Once cheese is melted and bread is golden brown, remove sandwiches from the heat.
Remove tops of sandwiches, add spinach, replace tops and serve immediately.
